2013 CSA: Week 23

There is so much great food to discuss today but the big news this week is the upcoming break. Starting with next week, we will break for 3 weeks. That means no deliveries again until the week of Monday, September 9th. We will still be attending the Columbus Farmers’ Market on Saturdays, but for everyone else, I hope you’ve already put in your meat and extra egg orders to tide you over the next 3 weeks.

I hope that everyone enjoys the exceptional cheese that monger-Jay has crafted for us this week. I sampled several of his varieties on a cheese plate this past weekend here at the Pavilion restaurant and it was delicious (especially with the pepper jelly!). Speaking of our little restaurant here on the farm. “The Daily Meal” recently included us on their Top 25 list of best farmstead restaurants. This list is international, and we’re proud that the Kitchen staff has been recognized for the hard work they do each day. Heads up for the future: Look out for emails and blog posts with information on pre-ordering your Thanksgiving Turkey (These are limited, very popular, and tend to sell out). As CSA members, you will receive a discount for your bird – and like I said, the e-mail in September will explain all of this again – I’m just teasing you with it now. And don’t forget that we also have Ducks and Geese as well, which also make a terrific centerpiece for holiday meals. I know it’s only August, but as farmers, we are already thinking about the holiday season because even though it’s only August, we’re already surrounded by baby turkeys!

We’ll miss you these next three weeks. But we’ll be busy getting everything ready for a triumphant return in September and looking forward to a lots more green groceries as we close in on Fall.

2 Ribeyes – A griller’s dream. This steak is a full-flavored, mild textured cut of meat that lends itself well to all types of dry heat cookery.

Chicken Breast –  Free-range, pastured, heritage cross chicken breasts. Our chickens are raised with no antibiotics or added hormones. Our chickens are also Step 5 rated by the Global Animal Partnership, which is the highest animal welfare rating.

Pasture Raised Eggs: 

Beautiful brown eggs from our own lovely ladies that range freely on certified organic pasture. The eggs are washed, candled and graded fresh for you each week. (Wanna add eggs to your order this week?  Please email me or call our office today: 229-641-2081)

Certified Organic Vegetables:

Buckwheat Ensalada OR Malabar Spinach OR Sweet Potato Greens – Gotta have those greens. We’ve had great feedback on the buckwheat greens, Young tender buckwheat greens are a perfect summer salad alternative when lettuce is out of season. They have a hint of nuttiness,  CLICK HERE to check out several tasty buckwheat green concoctions at Yummly. If you get Malabar Spinach in your box (Thick green leaves with a purpley stem, CLICK HERE for a good descriptive posting from last year.) And for Sweet potato greens, try HERE.

Garlic – At least one head of Inchelium Red softneck garlic, an heirloom variety we know you’ll enjoy.

Okra –  The star of summer. At least One pound bag of mixed Red and Green Okra.

Basil! – Caprese salads with Jay’s cheese are a summer favorite of mine. Pesto all around!  CLICK HERE FOR AN EASY PESTO RECIPE

Cucumbers or Squash – Squash still trying to make a comeback. But those Suyu long cucumbers are still the champions!

Peppers or  Eggplant – Mostly peppers. And they are delicious this week! You may hit the jack pot and get a double whammy of peppers and Hot pepper jelly!

Mixed Hot peppers – Mostly, jalapenos and Cayenne types.  mixed hot peppers are bagged separately for your convenience.

Mixed Herb – Sage, Rosemary, Stevia or Mint. All are surviving through the heat of summer miraculously well. Hope you enjoy!

2013 CSA: Week 22

With every week, I feel like we are beating the odds and proving that we can feed ourselves despite the slowing of fruit we observe during the hottest months. And this week, in addition to new summer greens, we’re proud to include some canned freshness from early this season and the fall of last to help supplement your veggie boxes. Much like the pecans from last week, these jars are a delicious teaser. My hope is that by sampling some of the many different items we produce, you will regularly include more grocery items with your orders each week. There are lots of options to try so pace yourself. Cindy is just a simple phone call or email away from having any of our grocery items added on to your order. Many of you are already enjoying this convenience and we are so excited to watch this “value added” part of our business grow. 

Now let’s talk about this summer break thing. We won’t know for certain until next week, but we are expecting to deliver again next week and then take 3 weeks off from deliveries. This is only a tentative announcement. Once the schedule is confirmed, you will receive an email from us – along with a Blog post just to be sure.  Of course, I’m letting you know now so that you can order enough additional eggs, meat and other grocery items to see you and your loved ones through those weeks off.

Finally, I’d like to recognize our wonderful Egg Team. Frankie Darsey and his crew met with inspectors last week from the animal welfare group “Certified Humane.”   Needless to say, everything went well and our egg cartons will soon bear the branding of “Certified Humane”.  Farm-wide, the Global Animal Partnership inspections all occurred last week as well, and we are proud to announce the highest animal welfare rating in all of our livestock categories, which include poultry, cattle and hogs. As soon as the GAP standards are finalized for eggs, we look forward to welcoming that inspection as well. We’re fiercely proud of what we do here and how we do it. Remember, as CSA members, you have an open door to come tour our farm as well. Thanks for being part of our big family. Now let’s talk about supper…

Spare Ribs –  (3 lbs/ 2 racks) A long cut from the lower portion of the carcass, spare ribs are great for barbecuing, smoking, or cooking over an open flame.

Canned Goodness! – Made here on the farm from organic ingredients. In order to place a jar in each box, we had to mix up your options 5 ways: Pickled Cucumbers, Pickled Radishes, Hot Pepper Jelly (my favorite!), Pickled Bush Beans, or Pickled Okra. Pop the top now or later – just remember to refrigerate after opening. Hope you enjoy!
