2013 CSA: Week 22

With every week, I feel like we are beating the odds and proving that we can feed ourselves despite the slowing of fruit we observe during the hottest months. And this week, in addition to new summer greens, we’re proud to include some canned freshness from early this season and the fall of last to help supplement your veggie boxes. Much like the pecans from last week, these jars are a delicious teaser. My hope is that by sampling some of the many different items we produce, you will regularly include more grocery items with your orders each week. There are lots of options to try so pace yourself. Cindy is just a simple phone call or email away from having any of our grocery items added on to your order. Many of you are already enjoying this convenience and we are so excited to watch this “value added” part of our business grow. 

Now let’s talk about this summer break thing. We won’t know for certain until next week, but we are expecting to deliver again next week and then take 3 weeks off from deliveries. This is only a tentative announcement. Once the schedule is confirmed, you will receive an email from us – along with a Blog post just to be sure.  Of course, I’m letting you know now so that you can order enough additional eggs, meat and other grocery items to see you and your loved ones through those weeks off.

Finally, I’d like to recognize our wonderful Egg Team. Frankie Darsey and his crew met with inspectors last week from the animal welfare group “Certified Humane.”   Needless to say, everything went well and our egg cartons will soon bear the branding of “Certified Humane”.  Farm-wide, the Global Animal Partnership inspections all occurred last week as well, and we are proud to announce the highest animal welfare rating in all of our livestock categories, which include poultry, cattle and hogs. As soon as the GAP standards are finalized for eggs, we look forward to welcoming that inspection as well. We’re fiercely proud of what we do here and how we do it. 2 Small Chickens – Our whole free-range, pastured, heritage cross chicken. Individually bagged and sealed, and raised with no antibiotics or added hormones. Our chickens are also Step 5 rated by the Global Animal Partnership, which is the highest animal welfare rating.

Spare Ribs –  (3 lbs/ 2 racks) A long cut from the lower portion of the carcass, spare ribs are great for barbecuing, smoking, or cooking over an open flame.

 

Pasture Raised Eggs: 

Beautiful brown eggs from our own lovely ladies that range freely on certified organic pasture. The eggs are washed, candled and graded fresh for you each week. (Wanna add eggs to your order this week?  Please email me or call our office today: 229-641-2081)

Certified Organic Vegetables:

Malabar Spinach OR Buckwheat Ensalada – Young tender buckwheat greens are a perfect summer salad alternative when lettuce is out of season. Baby leeks – Treat these like green onions in any dish you’re concocting this week.

Garlic – one head of Inchelium Red softneck garlic, an heirloom variety we know you’ll enjoy.

Okra –  One pound bag of mixed Red and Green Okra.

Basil! – Caprese salads with Jay’s cheese are a summer favorite of mine. Pesto all around!  CLICK HERE FOR AN EASY PESTO RECIPE

Cucumbers or Squash – Squash still trying to make a comeback. But those Suyu long cucumbers are still the champions!

Peppers or  Eggplant – Mostly peppers. And they are delicious this week! You may hit the jack pot and get a double whammy of peppers and Hot pepper jelly!

Mixed Hot peppers – Mostly, jalapenos and Cayenne types.  mixed hot peppers are bagged separately for your convenience.

Canned Goodness! – Made here on the farm from organic ingredients. In order to place a jar in each box, we had to mix up your options 5 ways: Pickled Cucumbers, Pickled Radishes, Hot Pepper Jelly (my favorite!), Pickled Bush Beans, or Pickled Okra. Pop the top now or later – just remember to refrigerate after opening. Hope you enjoy!
